This new EVOO is made from olives harvested in early October, at their optimal stage of early ripeness, resulting in a particularly fresh, intense, and balanced aromatic profile. Cold extraction is performed at temperatures below 27°C, ensuring the preservation of all its natural aromas, as well as its organoleptic and nutritional properties.
The result is a top-tier organic extra virgin olive oil with an intense and elegant fruity character. It stands out particularly for its high polyphenol content, exceeding 450 mg/kg—which gives it significant antioxidant value, and for its very low acidity, below 0.3°, both indicators of exceptional quality.
Furthermore, it features a clearly defined sensory profile, with pronounced fruity notes, scoring over 4.5, and a harmonious structure on the palate, reinforcing its identity as a premium, high-end EVOO.
